100% Chardonnay sourced from
vineyards in the Riverland area of
South Australia. An enticingly
fresh nose with subtle tropical
notes. The palate offers citrus
notes entwined with clean acidity
and a soft oak influence.
Making sure the berries were picked
at their optimum levels, night
harvesting was employed at
approximately 13 to 14 Baume thus
avoiding any likelihood of harsh
phenolics or loss of flavour. Small
batch fermenting in static
fermenters with a neutral yeast has
enabled full fruit flavours to
develop. Avoiding any further
malolactic fermentation produced a
truly fruit driven style of wine
with only a hint of underlying
French oak support.
