This 2007 Hillcot Merlot is deep
ruby red in colour with
blackberries, and bramble enticing
the nose immediately. These aromas
are complimented by dark chocolate
and layers of herbal earthy tones,
raspberries and toasty vanilla from
the oak. The palate is soft and
fleshy and loaded with classic dark
berry fruit flavours. The wine has
excellent structure and soft
approachable tannins with an
elegant lingering finish.
This medium bodied wine is ready to
enjoy now or over the next five
years. It is a terrific match with
lamb loin chops, spring vegetables
and lemon parmesan sauce.
