NEW to Upstairs at Campbell's we are delighted to welcome Villa Noria Levin 0% Blanc de BlancsA non-alcoholic sparkling wine with aromas of acacia and hawthorn accompanied by hazelnut, toast and tropical fruits, refreshing and clean on the finish.

Producer Notes
Villa Noria is the story of two wine enthusiasts, Fabien Gross and Cédric Arnaud, who both grew up in viticultural regions-Languedoc and Alsace-surrounded by vineyards and winemaking heritage and is the result of overflowing enthusiasm, ethics and values. The inheritance left to its owners by their winemaking ancestors, was passion and respect for the land. Located a stone’s throw from the Mediterranean Sea, between Pézenas and Montagnac, Villa Noria produces elegant organic wines, from vines which are HVE Level 3 certified and cultivated in perfect harmony with nature and the terroir. The winemaking is traditional, without chemical additions and only low doses of sulphur are used. Their natural ranges ‘Amfòra’ and ‘Basic Instinct’ are vinified without the addition of sulphur.


Vineyard
The Chardonnay grapes for Levin 0% Blanc de Blanc come from a single vineyard ‘Les Colombiers’, which is located at the bottom of a volcanic hillside. This volcanic terroir has basaltic soils, which is formed from cooled, hardened, and weathered lava, which contains high proportions of iron imparting the wine with distinctive minerality. The vines are pruned according to the Guyot method. The vineyard is certified organic and sustainable practices are employed in the vineyard. The vines are surrounded by hedges, to protect them from pesticide treatments in the neighbouring fields and also to provide a refuge for the wildlife, enhancing biodiversity and creating a balance.

Winemaking
Levin 0% is the first range of organic alcohol-free wine produced by non-alcoholic fermentation with native yeast and lactic acid bacteria. Developed and bottled at the Villa Noria estate, Levin 0% is certified organic, vegan and completely natural (no sulfites, no preservatives, no added flavors and no dealcoholization that changes the balance of the wine). The Chardonnay grapes are harvested at night at the beginning of August in order to have grape juice with high acidity and low residual sugar. After destemming and crushing, we make 12 hours skin contact at 3 °C to extract the aromas from the skin of the berries; and then a gentle pressing. The innovation of Levin 0% is to ferment the juice with homemade bacteria and yeast strains that produce no alcohol. This no alcoholic fermentation transforms the sugar from the grape juice into lactic acid, glycerol, CO2 and aromas. After this nonalcoholic fermentation, we make a sterile filtration and pasteurization in bottle to stabilize Levin 0%. We use no sulfites and other additives.

Tasting Notes
Levin 0% Blanc de Blanc is a nonalcoholic sparkling wine with nice small bubbles and persistant foam. The nose offers aromas of white flowers such as acacia and hawthorn, along with notes of hazelnut, toasted bread, and exotic fruits like mango. On the palate, it is refreshing with a nice acidity, with creamy and pleasant bubbles.
